ALTER: Wynwood’s Standout Restaurant
by Camila Straschnoy
This is the sort of place that is common in a city such as New York but until recently didn’t exist in Miami. At ALTER, it’s all about creating that industrial-chic feel and focusing on exquisitely presented dishes that use local sourced ingredients. The menu is colorful, tasteful and unfussy, complemented by a wide-ranging wine list spanning everywhere from the Old World to California and Oregon.
This über-popular restaurant, located in Wynwood, has gained a stellar reputation for offering creative, 5-star cuisine in a casual environment while listening to some rock. It is an “ALTERnative” way of experiencing upscale dinning at and industrial-looking concrete warehouse. Chocolate-colored wooden tables are just a touch distressed to show off the grain. The lone bit of decoration is a twisting neon sculpture that burns a sinister red above a bar separating the 38-seat dining room from the open kitchen.
The food is the star at this restaurant, which offers an ever-changing menu that’s as adventurous and exotic as Miami’s international reputation.
My personal favorite: Kilgore’s soft-cooked egg. He cloaks the runny ovum in Gruyère cheese espuma infused with a sea scallop’s briny punch. Minuscule truffle pearls add luxurious complexity, while a wafer-thin Gruyère crisp provides some crunch. Be sure to order bread and butter to mop up the bowl.
Adjacent to the restaurant, you will find BAR ALTER, an outdoor patio bar that offers an exquisite selection of craft cocktails created by Mixologist Gustavo Martinez. BAR ALTER opens before the restaurant at 5p.m. offering the possibility of enjoying a cocktail before your dinner.
At ALTER’s terrace you will also be able to enjoy a special menu that offers mouth-watering dishes such as the Iberico Burger with chorizo mayo, spicy yuzu pickles and furikuke borioche, and the Maitake Mashroom with toasted nori, chicken fat and sherry vinaigrette.
My favorite cocktail: Pillow Talk. Hendricks Gin, Grand Classico, Dandilion Brudock Bitters, and Celery and Fennel Foam.
